Ingredients

  • 1.5 oz Hine Cognac (or your preferred high-quality Cognac)
  • 3/4 oz Sweet Vermouth
  • 1/3 oz Bénédictine (approx. 2 teaspoons)

  • 2 dashes Peychaud’s Bitters

Step-by-Step Instructions

Step 1: Prepare Your Glassware

Place a rocks glass or a coupe glass in the freezer for a few minutes to chill. If using a rocks glass, prepare a single large ice cube (bougie ice) to ensure slow dilution.

Step 2: Combine Ingredients

In a mixing glass filled with plenty of ice, combine the Hine Cognac, sweet vermouth, and Bénédictine. The Bénédictine is potent, so a ‘guesstimation’ of a third of an ounce is usually sufficient to add depth without overpowering the other spirits.

Step 3: Add the Bitters

Add one dash of Angostura bitters and two dashes of Peychaud’s bitters. This combination provides both spicy and floral aromatic notes that elevate the Cognac base.

Step 4: Stir Until Chilled

Using a long bar spoon, stir the mixture gently for about 20–30 seconds. You want the outside of the mixing glass to feel cold to the touch. Stirring is preferred over shaking to maintain the cocktail’s clarity and velvety mouthfeel.

Step 5: Strain and Serve

Strain the mixture into your chilled glass. If using a rocks glass, pour it directly over your large ice block. If using a coupe, serve it neat.
